Witch Finger Cookies

Chado Tea Witch Finger Cookies
  • Servings: 50 cookies

  • Prep Time: 15 minutes

  • Total Time: 1 hour and 50 minutes

    Ingredients:

    • 1 ¼ cup powdered sugar

    • 1 cup (2 sticks) unsalted butter, softened to room temperature

    • 1 large egg

    • 1 teaspoon vanilla extract

    • 1 teaspoon almond extract

    • 5 to 6 drops of green food coloring

    • 2 ¾ cups all-purpose flour

    • 1 teaspoon kosher salt

    • ½ cup finely chopped pistachios, plus more for decorating

    • ¾ cup sliced almonds

    • ½ cup cherry, strawberry, or raspberry jam

    Directions:

    1. In a large bowl of a stand mixer fitted with the whisk attachment on medium speed, beat powdered sugar and butter until pale and fluffy, about 2 minutes. Add in the egg and continue to beat until incorporated and fluffy, about 1 more minute. Add almond extract, vanilla extract, and food coloring and beat until combined.

    2. In a small bowl, whisk together flour and salt. Add to butter mixture and beat until just combined on low speed. Fold in the pistachios, cover the bowl with plastic wrap and refrigerate for at least 30 minutes or up to 2 days.

    3. Line 2 rimmed baking sheets with parchment paper. Remove one-quarter of dough from the refrigerator and portion into 12 to 13 balls (1 tablespoon). Roll each ball between your palms until it starts to form a finger shape, about 3”-by-½”, or the length of your pinky finger but slightly thinner.

    4. Arrange the fingers on a prepared sheet and press an almond slice into each, where the nail would be on a finger. Carefully pinch the dough just below the along and hallways down the finger to create a knuckle.

    5. Using a sharp knife, carve horizontal lines of varying lengths into the knuckle. Place 1 or 2 pistachio pieces in the finger to make warts. Repeat with the remaining dough. Freeze for 30 minutes.

    6. Preheat the oven to 375°F. Bake , rotating trays front and back halfway through, until the edges are firm and tops of the cookies are dry, 7 to 9 minutes. Let cool slightly.

    7. Gently lift off the almond fingernail. Add a tiny dab of jam to the tip of the finger, then replace the almond fingernail, pressing down to make jam ooze out. Spread jam onto bottom of each finger, let cookies cool completely.

    Spider Trifle

    Chado Tea Spider Trifle Cake
    • Servings: 8 to 10

    • Prep Time: 25 minutes

    • Total Time: 2 hours and 25 minutes

    Ingredients:

    • 1 box chocolate cake mix, plus whatever ingredients are listed on the box

    • 12 ounce cream cheese, softened

    • ½ cup sugar

    • 2 cups pumpkin puree

    • ⅓ cup sour cream

    • 1 teaspoon vanilla extract

    • ½ teaspoon pumpkin pie spice

    • 6 cups cool whip, divided

    • 1 package oreos, crushed

    • Chocolate syrup

    • Plastic spider

    Directions:

    1. Preheat oven to 350° and grease a 9” by 13” baking pan.

    2. Prepare chocolate cake mix according to the package directions and bake until a toothpick inserted in the center comes out clean, about 25 minutes. Set aside to cool.  When cooled, crumble into bite sized pieces.

    3. Meanwhile, make the pumpkin mousse.  In a large bowl using a hand mixer, combine the cream cheese and sugar until smooth.  Add the pumpkin puree, sour cream, vanilla, and pumpkin spice and beat again until smooth.  Add 2 cups of cool whip and fold into the pumpkin mixture until fully incorporated.

    4. Assemble the trifle: lay down a layer of chocolate cake on the bottom of the trifle dish.  Top with a layer of the pumpkin mixture, a layer of crushed Oreos, and a layer of Cool Whip.  Repeat until the trifle is full, ending on Cool Whip.

    5. Drizzle syrup in a spiral motion from the inside out on the top of the trifle.  Using a toothpick, start in the center and drag it outward to the edge of the trifle to make a spider’s web.  Place the spider in the center of the web and place the trifle in the refrigerator for at least 2 hours, up to overnight.
